Cashew and Cacao Energy Bars

Ingredients:

  • 1 tea cup raw cashew nuts (soaked for 2-3 hours)
  • 15 pitted dates (soaked for 30 min)
  • 3 Tbsp raw cacao powder
  • 1 pinch of salt
  • 1 teaspoon cinnamon
  • 4 Tbsp raw milled flax seeds
  • 2-3 Tbsp Cacao butter (melted)
  • orange zest from 1 orange

Instructions:

Place cashew nuts in a food processor and pulse until they turn into small bits. Add the rest of the ingredients and process a few times just to break everything down. Pulse until all ingredients are well combined.

Roll out the mixture on a chopping board. I use a knife to spread it as thin as I like. If knife gets sticky, dip in water. Cut into bars and store in the fridge for up to one week. I normally make around 10-14 bars with those ingredients.
